As we step into the warmer weather and it being National Fresh Fruits and Vegetables month, I’m so excited to finally share this recipe where we can use one of my favorite summer fruits as a sabzi!
Here’s a recipe for a watermelon rind curry, so don’t throw away the rinds when you have watermelon this season.
I only found out recently that the rinds of watermelon are edible and high in nutrients like fiber, vitamin A and C, potassium and magnesium.
Watermelon rind takes on the flavors you cook it in and has a similar texture to a gourd / kadoo when cooked.
