Vegetable Jalfrezi

Happy New Year all! Here’s a veggie jalfrezi to give a spicy kick start to your year while also using up leftovers! This warming dish which is popular throughout South Asia originates from Bengal. It is made by stir frying ingredients in a thick spicy sauce with green chilies; my version is packed with vegetables but you can add in paneer (V) or tofu (Ve).⁣
