This week's recipe is for a traditional Indian/Pakistani dessert, Gajar ka halwa. This is made by cooking grated carrots, has some cardamom and rose for a lovely fragrance and nuts and dried fruits for extra flavor and texture.
Gajar ka halwa traditionally includes dairy products such as ghee (type of butter) and milk but I have switched these products for coconut oil and almond milk to make it plant based. This is delicious when served warm and I’ve been mixing a few tablespoons of the halwa into my porridge/oatmeal, topped with some extra nuts and dried fruits to make a lovely, spiced carrot-ty breakfast!
