This is a simple sabzi made in the slow cooker so that you can cook it in bulk and store it in the fridge or freezer for another day. Sabzi simply means vegetables and so you can experiment any vegetables of your choice. I normally do a mixture of courgettes (zucchini), yellow squash and turnips but feel to mix it up with veggies that you prefer.
This style of vegetables is quite common in South Asian households. It’s a great mid week meal and perfect for any kind of day, paired with a roti, pitta or rice. It typically has the consistency of a casserole or a thick stew, the vegetables should be nice and chunky, and should hold their shape.
