NO FRY, CRISPY BHINDI MASALA

June is National Fresh Fruit and Vegetables Month so of course I’ll be sharing some fruit and veggie recipes to celebrate their awesomeness!


To start, here is a crispy bhindi (okra) masala. Growing up we loved having bhindi at home. It’s normally deep fried to get that lovely crispy texture but roasting in the oven does the job with a lot less oil!




I’ve used a 12 oz bag of frozen cut okra in this recipe but feel free to use fresh okra too, you just won’t need to roast it as long. The frozen okra does not need to be thawed, just toss it in some oil and spices and roast, it’s still as crispy.
